Pesche Ripiene alla Piemontese


Stuffed and baked, these scrumptious Piedmont-style peaches won’t last long.

Ingredients

4 ripe peaches, halved and pitted

8–10 amaretti cookies (about ½ cup crushed)

2 tsp cocoa powder

2 tbsp sugar

1 egg yolk

2 tbsp milk or a splash of rum (optional)

butter for greasing

mascarpone or whipped cream for serving

Instructions

  1. Preheat the oven to 350°F. Grease a baking dish with butter.
  2. In a small bowl, crush the amaretti cookies and mix with cocoa powder, sugar, egg yolk, and milk or rum until you get a moist, crumbly filling.
  3. Place peach halves cut side up in the dish and fill the centers with the cookie mixture.
  4. Dot each with a tiny bit of butter on top.
  5. Bake for 30–35 minutes, until the peaches are soft and the tops are lightly browned.
  6. Serve warm or at room temperature with a spoonful of mascarpone or fresh whipped cream.
