Pizza Gain for Easter Sunday


Italian Easter pie goes by many names, and here's one of our favorite recipes.

For the dough:

Ingredients

2 cups flour

.5 cup oil

.5 cup tepid water

Half envelope yeast

Directions

  1. Mix yeast with water. When foamy, mix the other ingredients.
  2. Make a ball, cover and let it rise for an hour.

For the filling: 

Ingredients

2 lbs ricotta

.5 cup grated Romano cheese

1 lb diced mozzarella

.5 lb ham sliced thick cut into cubes

1/4 lb salami or soppressata, sliced thick cut into cubes

1/4 lb prosciutto sliced thick cut into cubes

8 eggs well beaten

1/2 teaspoon pepper

Directions

  1. Mix ingredients together, roll out dough, put into slightly oiled roasting pan
  2. Line pan sides with dough, and pour in filling
  3. Cover with dough
  4. Slit dough with a fork to help release the steam
  5. Bake at 375° for about 60 minutes
