“I cuscini,” or pillows, are cookies that are made to look like raviolis. They are stuffed with a mixture of pureed chestnuts and other ingredients, and then fried. “Cecil,”or chickpeas, may be substituted for chestnuts. Or, both options may be mixed together.
Ingredients
- 1 3/4 cups all-purpose flour
- 2 egg yolks
- 1 Tbsp. water
- 4 tsp. olive oil
- 1/2 lb. cooked chestnuts (Fresh or canned) Chick peas may be substituted or mixed in with the chestnuts.
- 4 tsp. honey
- 2 1/2 Tbsp. grated baking chocolate
- A splash of white wine (can be omitted)
- Teaspoon of ground cinnamon (or to your liking)
- 1/2 tsp. vanilla
- Oil for frying
- Powdered sugar (for sprinkling)
Preparation
For the Pastry: Sift flour on a counter or board and make an indentation in the center. Add egg yolks, 1 tablespoon water and olive oil. Mix flour and ingredients, until dough mixture is firm, then continue to knead until smooth; cover and set aside, while preparing the stuffing.
For the Stuffing: Puree or mash the chestnuts (or/and chickpeas). Add the honey, chocolate, cinnamon and vanilla. Mix thoroughly.
Directions
Fill And Fry The Cookies: Prepare and roll dough out into a thin sheet, just as you would ravioli. Space dabs of filling about 2-3 inches apart; fold over and press edges firmly with a fork to seal them.
Deep fry in hot oil until golden brown. Take from pan to drain on paper towel and cool. Sprinkle with powdered sugar.
*Makes about 15 plus ravioli, depending how big you make them.
