Italian Recipe: Lemon Mascarpone Tart


Simple, scrumptious and ready in an hour.

Ingredients

For the Crust:

  • 2 cups all purpose flour (260 grams)
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 2 large eggs
  • ¼ cup cold butter, cubed

For the Filling:

  • 1 pound mascarpone cheese (about two cups, 454 grams)
  • ½ cup powdered sugar
  • 1 large lemon, zested and juiced
  • 1 teaspoon vanilla extract
  • lemon slices for garnish, optional

Instructions

  • In a large food processor fitted with the blade attachment combine the flour, sugar, baking powder, and salt. Put on a lid and pulse until combined.
  • Then, add in the eggs and cold cubed butter. Pulse until the mixture is well combined. You’ll know it is ready when you can squeeze the dough together and it holds its shape.
