Ingredients
Bread
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1 Tablespoon fresh lemon zest (from 1 lemon)
- 1/2 cup vegetable oil (or canola oil)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup grated unpeeled zucchini
Glaze:
- 1/3 cup powdered sugar
- 2 teaspoons fresh lemon juice to 3 teaspoons fresh lemon juice
